Hibachi Fried Rice & Vegetables

Ingredients for Fried Rice:

  • 1 cup of SmartRice
  • 1 tablespoon avocado oil
  • ½ cup white onion diced
  • ½ cup frozen mixed vegetables
  • 1 large egg
  • 2 tablespoons butter
  • 3 tablespoons soy sauce

Ingredients for Hibachi Vegetables:

  • 1 ½ teaspoons sesame oil
  • 1 tablespoon avocado oil
  • 1 small zucchini, quartered and cut into 2" pieces
  • ½ small white onion, halved and cut into ½" pieces
  • 1 cups portobello mushrooms
  • 1 tablespoon butter
  • 2 tablespoon soy sauce
  • Salt
  • Pepper

Ingredients for Yum Yum Sauce:

  • ½ cup mayonnaise
  • 1 teaspoon tomato paste
  • ½ tablespoon rice vinegar
  • ½ teaspoon red pepper cheyenne
  • ½ teaspoon garlic powder
  • ½ tablespoon Sugar
  • ½ tablespoon Melted Butter
  • Salt
  • Pepper
  • 2- 3 tablespoons water

Directions:

  1. Heat avocado oil in a pan or wok over a medium heat. Add in diced onion and frozen vegetables, mix until onions are translucent.
  2. Make a hole in the center of the vegetables and crack one egg. Scramble this until the egg is cooked through, mix everything together.
  3. Add rice and butter to the mixture and cook for 5 minutes. Add soy sauce and cook for an additional minute.
  4. In a separate pan or wok, heat avocado and sesame oil over a medium-high heat.
  5. Add in your vegetables (zucchini, mushrooms, onions) with butter, soy sauce, salt and pepper.
  6. Sautee this until the vegetables are fully cooked through. Keep this in a low temperature to keep hot while making the sauce.
  7. In a separate bowl mix together the mayonnaise, tomato paste, rice vinegar, red pepper, garlic powder, sugar, melted butter, salt, pepper and water. Stir until completely mixed.
  8. Add hibachi rice, vegetables and sauce to a plate and enjoy!
